TGIF!!

Nothing makes me happier than the weekend, especially a weekend where we do not have to wake up at least one of the mornings for hockey!!  Don't get me wrong, I am a hockey mom and I love every minute of it... but I also cherish sleeping in!!  The boys have an afternoon game tomorrow and we have dinner plans for the team afterwards at the infamous Shady Maple.  The big smorgasbord that you fill up and feel like an oompa-loompa when you leave!  Going to have to finagle a Happy Birthday song for Mike in there too, as he will be away for his actual bday for work. 

Did anyone watch Off the Map or Gray's Anatomy last night?  Both were well written and enjoyable!  Off the Map is bound to be a new favorite of mine!  I love the characters and the dynamics between them.   This week was much better for Gray's too!  Meredith's hair looked goofy last night with those wispy unkempt bangs she had circling her face.  Not the right style at all.  I do hope she gets prego soon though!!

Going to try to catch Real Housewives of Beverly Hills for a few before I steam the floor.  Kiddies are all napping and it never lasts long.  Camille is ever annoying and pitiful as usual.. can't wait to see what she has in store for me this week!

Dinner...give it a shot?

I have been in search of new easy recipes with foods that taste good and that I have on hand.  Those recipes are hard to come by!!  Especially healthy ones. 

So the other day I came across a Parmesan Chicken recipe.  The reviews were great, which means a lot to me, as I hate trying something without "real people" opinions. I had to finagle the recipe a little due to not being 100% prepared with ingredients, but according to the reviews, most did this too and loved the results.
   
Give it a shot?:

Parmesan Chicken

Ingredients:
  • 1/2 cup Dijon or coarse ground mustard  (did not have either- used yellow mustard/honey mixed)
  • 1/4 cup apple juice
  • 2 cloves garlic, minced
  • 2 Tbsp. butter, melted
  • 2 cups fresh soft bread crumbs (used Japanese Panko bread crumbs)
  • 3/4 cup grated Parmesan cheese
  • 1/4 cup ground almonds (used less than a 1/4 cup as it was all I had left)
  • 3 Tbsp. butter, melted
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 tsp. dried basil leaves
  • 8 boneless, skinless chicken breast halves

Preparation:

Line a 13x9" pan with heavy duty foil and add a wire rack. Preheat oven to 375 degrees.  
In shallow pan, mix mustard, apple juice, garlic, and 2 Tbsp. melted butter. 
 
In another pan, mix the crumbs, Parmesan cheese, almonds, 3 Tbsp. melted butter, salt, pepper, and dried basil. Toss until evenly mixed.
 
Coat chicken in the mustard mixture, then roll it in the Parmesan cheese and bread crumb mixture until thoroughly coated.

Place the Parmesan Chicken on rack on top of the foil. Bake for 20-25 minutes, until golden brown and thoroughly cooked.


This chicken was very crispy and tasty!!  Kids and hubby devoured it and went back for seconds.  To go along with this I served peas and egg noodles sauted in garlic/olive oil and then tossed with butter/salt/pepper.  I will be adding this to our family favorites recipes!!

Let's get serious people...

I love the fact that the new year brings out everyone and their resolutions.  Nothing makes me laugh more than those who are making "big changes"... like losing weight.  Come on now people, we all know that if we rewind back a year, this same thing was being said then!  Seriously, what now?  You have gained at least 5 lbs since last year, if not more, and you are really thinking that taking that same exact approach is going to definitely make the changes you need this time around?  "I'm going to hit the gym every night and I am going to lose xx-lbs by such and such a date..."  Do yourself a favor and CANCEL the damn gym membership now if you already signed up and save yourself a couple of hundred dollars!!  You will be the person in 6 months complaining you have no money...
We both know that it takes way more than a few classes at a local gym or a few miles on a treadmill to lose the weight.  I can see it now.. a few days or maybe even weeks of posts.  Something comes up, you miss a night or two of gym time.  Then, boom, you or your kid gets sick.. and you miss about a week of gym time.  Now, you know you could have went to the gym after day 3 of being sick, but you didn't feel up to it.  So you blame your sickness on the fact that you have to miss and by the end of 2 weeks of you missing gym... you decide it wasn't really for you in the first place.  You might convince yourself to go once or twice again when the guilt of the monthly debit comes out of your account to pay for your membership, but at this point, you say SCREW IT!! 

Turn on just about any tv channel and at any point of day you will see all of these "instant" fixes for weight loss.  Seriously, if these worked so well, why do they need to sell them still, obviously everyone would be skinny and these companies would be put out of business!!!  Look thru any sales flyer right now and each and every store is selling something to do with getting fit:  dvds, exercise equipment, etc. 
These products only work if you use them.  Let's be honest with each other, you will buy them and put them in for about 2 weeks and then be done with it (see above reasons why).  But in the long run, hey it was definitely cheaper for the $20 dvd than the $200 gym membership!! 

If you really want to lose weight... put some thoughts into what exactly you eat and do all day.  Watch a show like The Biggest Loser or I Used to Be Fat and see that it takes hardcore training and major dietary changes to actual drop weight and keep it off.   Put yourself into it 100%!!  You can do it, if you do it right!

Start of a blog? ...

Not sure why, but today is the day I finally decided to get my thoughts together and write a blog of my own.  I am quite the voyeur reading anything and everything I pass by online... and now Ill have a place to put my comments.  It could be good or bad... but whatever, it will all be in good fun!
